I’ve been looking for some meatless recipes since Lent is just around the corner. (I decided that I should be pro-active in my Lenten meals this year instead of resorting to cheese and crackers. Mainly because I love cheese too much, so its more of an indulgence.) I found this one via Miss Moss on StoneSoup. All you need is seasoning, veggies and hot water! I think this would be a great idea for work lunches, I could pre-assemble a few on Sunday night, put them in the fridge, and then heat them up at work! Brilliant!
