About a week ago I was craving something different for dinner. Something soupy, but Asian. After mulling it over on the way to work, I decided that I was craving Pho – Vietnamese beef soup. After texting back and fourth with my Pho happy friend, I came up with some ideas and googled a recipe. I found Faux Pho at Epicurious which was perfect, I didn’t have to make my own beef stock (not that I wouldn’t have loved to make my own beef stock, I just didn’t have time that week). It was so good!
